Stuffed White Fish Wrapped in Bacon

Ingredients:

  • 1.5-2# white fish fillets
  • 4 strips meaty bacon
  • ¼ cup butter
  • 1 small onion, finely chopped
  • 1 cup fine fresh brown breadcrumbs
  • 1 tsp finely chopped fresh parsley
  • 1 large pinch mixed dried herbs (herbs de provence work well)
  • Salt and peper to taste

 

Directions:

  • Preheat oven to 375° Trim fish fillets if needed to make them easy to roll. Butter a shallow baking dish large enough to hold the rolled fillets.
  • Make the stuffing by melting the butter in a small skillet. Add the onion and cook over low or med-low heat until softened, but not brown (add a tablespoon or two of water to help keep the onions from browning). Add the breadcrumbs, parsley, dried herbs, and season to taste with salt and pepper.
  • Divide the stuffing evenly among the fillets, roll them up, and wrap a slice of bacon around each one. Secure each roll with a toothpick and lay them in the baking dish.
  • Cover the dish with foil and bake in the preheated oven for 15 minutes, removing the cover for the last 5 minutes or so to crisp the bacon a bit.
  • Serve with potatoes and green beans or broccoli.
