Ingredients:
- ½ sleeve saltine crackers
- ½ cup pecans
- ½ tsp salt
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp black pepper
- ½ cup milk
- Hot sauce to taste
- 3 Tbsp flour
- 1 tsp seasoned salt (or favorite seasoning blend)
- 4 6-8oz tilapia fillets
- Vegetable oil for cooking
- Lemon wedges
Instructions:
Combine crackers, half the pecans, salt, garlic and onion powders, and pepper in a food processor and process until they’re well combined and finely chopped. Add the second half of the pecans and pulse until coarsely chopped, and pour into a shallow dish or plate.
Place flour and seasoned salt in another shallow dish or plate.
Combine milk and hot sauce in a medium bowl or pie pan.
Dredge each fillet first in flour, then in the milk mixture, then into the pecan mixture.
Heat 1 ½ tsp oil in a large skillet (non-stick works best) over medium-high heat. Place two fillets in the pan, cooking for ~3 minutes per side. Set fillets in a warm oven and repeat with remaining fillets. Serve with lemon.
