About The New Owners
Tom’s Seafood and Specialties has been a real treasure in Lakewood since 1998. When Maggie and Apos Kourakis learned that the old owners were ready to begin their next adventure, they immediately knew that taking over the market was the next chapter in their book.
Maggie and Apos are geoscientists with a passion for great food who were drawn to Colorado for the opportunities and adventures that the Rockies effortlessly provide. They discovered Tom’s while looking for quality seafood in the area. Their family was immediately hooked – even their 3-year-old, Zoey, has always been excited to grab her favorite treat, smoked salmon, every time they stopped by for dinner. They have been regulars for a few years, and they are excited to be the new owners.

Frequently Asked Questions
I’m new to eating fish. What do you suggest to help me “acquire the taste”?
What is a scallop?
I’d tell you it’s a mollusk, but I doubt that’s what you want to hear. The 2 most popular types are bay and sea scallops. We fish-lovers like them for the delicate, sweet meat inside the shell. Scallops can be broiled, grilled or pan seared.
What's the difference between frozen and fresh seafood?
Because freezing technologies have come so far, frozen seafood can also be delicious. Now days, fresh fish is caught and flash frozen right on the fishing vessel…keeping the taste and nutrition intact so there really is no downside to buying fish frozen correctly directly after being caught. BUT…as we all know, NOTHING beats fresh!
How long can I freeze fish?
Fatty fish – like salmon – can stay in your freezer for 2 to 3 months.
Leaner fish – like cod or flounder can last up to 6 months.
What is the most nutritious seafood?
Spanish Mackerel, eel, farmed Atlantic salmon, wild freshwater catfish, flounder…in that order.
