Grilled Red Snapper with Rustic Point Mango Salsa

Ingredients:

  • 4 (8-oz) red snapper fillets
  • 2 limes, juiced
  • 1 tsp garlic, chopped
  • 1 tsp minced fresh ginger
  • 1 tsp coarse ground black pepper
  • 3 Tbsp extra-virgin olive oil
  • 1 1/4 cup Rustic Point Mango Salsa (found at our store)
  • 4 lime wedges, for garnish
  • 1/2 cup fresh cilantro, chopped, for garnish

Directions:

  1. Preheat grill
  2. Place the red snapper fillets in a shallow dish and reserve. In a small bowl, combine lime juice, garlic, ginger, pepper, and olive oil. Pour the mixture over the fish and let sit for 15 minutes.
  3. Grill the fish over medium heat until the flesh is cooked through and opaque (about 4 min per side) depending on the size of the fish. Top with mango salsa.
  4. Garnish with fresh cilantro  and lime wedges.
