This is a recipe from one of our favorite cooking shows – Two Fat Ladies. It’s best when made with fresh sweet corn, but frozen will work just fine. We like to pick our own Dungeness crab for this recipe, although you can use lump blue crab as well.
6 ears fresh sweet corn (or 1 pkg frozen corn kernels)
1 lb crab meat (approximately 1 large Dungeness crab)
1 medium onion, grated
2 Tbsp fresh cilantro, chopped
1 tsp ground coriander
2 cloves garlic, minced
3 eggs, lightly beaten
1/3 cup flour
Salt and pepper to taste
Oil for frying
Lemon or lime wedges for garnish
DIRECTIONS:
- Cut the sweet corn kernels from the cob into a large bowl. Mix in the onion, cilantro, coriander, garlic and eggs.
- Sprinkle 1/3-1/2 the flour over the veggie mixture and mix well, repeating until flour is incorporated.
- Add the crab meat and mix gently with your hands.
- Cover bowl and refrigerate for at least 4 hours.
- Heat 1 Tbsp of oil in a frying pan and drop large spoonfuls of corn and crab mixture into pan. Cook until very brown and then turn carefully and cook the other side.
- Drain fritters on paper towels and keep hot until all fritters are cooked. Serve with a sprinkle of chopped cilantro and lemon or lime wedges.
