Ingredients:

  • 1 lb tuna, cut in ½ inch pieces
  • ½ cup fresh lemon or lime juice
  • Dice all of the following in ¼-inch pieces:
    • ½ sweet onion
    • 2 scallions
    • 2 med tomatoes
    • 1 cucumber
  • 1 cup coconut milk

Instructions:

Marinate the fish in the citrus juice while you dice the veggies, but no longer than 20 minutes. Drain the fish and mix with the vegetables and coconut milk. Season to taste with salt. Refrigerate for at least 30 minutes. If you’d like a little spice, add a bit of chili paste with the vegetables and coconut milk.
