This recipe was given to us by a close friend that likes simple, delicious food. It takes just a little bit of pre-planning, but it’s mostly hands-off cooking and is her go-to recipe when she wants to impress and doesn’t have much time.
Ingredients:
- 1 prime rib (assume about 1 lb per person for bone-in)
- Prime rib seasoning (use your favorite blend – we like the Flat Irons Prime Rib Rub from Savory Spice Shop – or mix up your own with salt, pepper, garlic, and dried herbs).
- 1 tsp Maggi seasoning (look for it in the Asian section of your supermarket)
- 3 beef bullion cubes
- 1 cup of water
Directions:
- Set your prime rib on the counter overnight. This will allow it to come to an even temperature throughout and make the following cooking process work well.
- In the morning, preheat your oven to 375°F. While the oven is preheating, rub the prime rib all over with your spice mix (assume approximately ½ cup seasoning per 10# of meat) and place in a roasting pan. Place the roast in the preheated oven for 1 hour, then turn off the oven and DO NOT OPEN for 5-7 hours (this is VERY important! We’ve taped it shut and hung a sign on the front).
- Turn the oven back on to 375°F (yes, with the roast still inside!). Cook for another 30 minutes for rare, 40 minutes for medium-rare to medium, and 60 minutes for medium-well to well done.
- While the roast is cooking for the second time, mix the Maggi seasoning, bullion cubes, and water. Heat over medium heat, stirring occasionally, until cubes are dissolved. Serve over your meat/potatoes/veggies. This recipe makes two servings of sauce, so you may want to double the batch to make sure you have enough. It also makes a great au jus for a french dip sandwich the next day!
