Ingredients:
- 1.5-2# white fish fillets
- 4 strips meaty bacon
- ¼ cup butter
- 1 small onion, finely chopped
- 1 cup fine fresh brown breadcrumbs
- 1 tsp finely chopped fresh parsley
- 1 large pinch mixed dried herbs (herbs de provence work well)
- Salt and peper to taste
Directions:
- Preheat oven to 375° Trim fish fillets if needed to make them easy to roll. Butter a shallow baking dish large enough to hold the rolled fillets.
- Make the stuffing by melting the butter in a small skillet. Add the onion and cook over low or med-low heat until softened, but not brown (add a tablespoon or two of water to help keep the onions from browning). Add the breadcrumbs, parsley, dried herbs, and season to taste with salt and pepper.
- Divide the stuffing evenly among the fillets, roll them up, and wrap a slice of bacon around each one. Secure each roll with a toothpick and lay them in the baking dish.
- Cover the dish with foil and bake in the preheated oven for 15 minutes, removing the cover for the last 5 minutes or so to crisp the bacon a bit.
- Serve with potatoes and green beans or broccoli.
