Ingredients
3 12-inch untreated cedar planks
1/3 cup extra virgin olive oil
1 1/2 tablespoons rice vinegar
1 teaspoon sesame oil
1/3 cup soy sauce
1/4 cup chooped green onions
1 tablespoon grated fresh ginger root
1 teaspoon minced garlic
2 2-pound salmon filets, skin removed
Directions
1. Soak the cedar plans for at least 1 hour in warm water. Soak longer if you have time.
2. In a dish, stir together the olive oil, rice vinegar, sesame oil, soy sauce, green onion, ginger, and garlic. Once mixed, place contents in a ziploc back and marinate the salmon for at least 15 minutes, or up to an hour.
3. Preheat your grill and then reduce heat to medium. Place the planks on the grate for a few minutes, then place the marinated salmon on the planks, and discard the marinade.
4. Close the grill and cook for roughly 20 minutes. Fish is done when you can flake it with a fork. It will continue to cook after you remove it from the grill.
Tips
* Keep an eye on your planks as they can smolder and even catch fire.
* Keep a spray bottle handy to keep the flames down. The smoke is fine (and actually makes for some added flavor), but you don’t want to burn the fish.
Serve with some jasmine rice and steamed vegetables to round out your meal.
